WThis is a home-style take on a cocktail found on the seasonal cocktail list. Designed as a party-sized pre-mixed which is packed with the flavours of a festive period, which makes it ideal for a festive gathering. Save the extra syrup to use in morning drinks, desserts, or to make another batch of this cocktail.

Serves 10 guests
Ingredients for the Clementine Cordial (yields 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar
Ingredients for the Cocktail (yields 850ml, to serve 10)
400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, to finish
Directions
To prepare the Cordial: Put all the components into a pan, bring to a gentle boil, mixing until the sugar dissolves. After that, turn off the stove allowing it to cool down entirely. Transfer into an clean bottle, close it keeping it in the fridge, where it will keep for up to four weeks.
To make Cocktail Base: Mix the specified spirits and syrup into a large bottle, allow it to infuse for 60 minutes, then filter it best through cheesecloth, making it fully clarified.
When ready to serve: Add 85ml from the batch mix into your mixing glass packed with ice, and agitate carefully for one minute to cool it down. Filter to a cold coupe glass or similar, decorate with some cranberries adding the final touch by giving it a quick spritz of mandarin oil over the drink.
